We are pleased to be the first U.S. producer selected to work with the thick backfat from Spain's famed Pata Negra pigs. These black-footed pigs roam in cork and oak groves in Southern Spain, eating a diet of mostly acorns, extremely high in monounsaturated fat, approaching the qualities of olive oil. The resulting lardo is supple at room temperature and has a unique nutty flavor, perfect on its own or paired with grilled bread, beans, or fruit. Includes: One approximately 1-pound piece of Lardo Iberico de Bellota, unsliced.
Please be advised that this is a perishable product, shipped in insulated packaging with ice packs. Product must be refrigerated immediately upon arrival -- Boccalone is not responsible for product spoilage due to missed delivery or improper storage.
