Ciauscolo (say "cha-USE-colo") is a semi-soft salami, originating from the hills of Le Marche, along Italy's Adriatic coast. Unlike its longer-aged cousins, Ciauscolo is prized for its softer texture than "hard" salami and meant to be eaten while young. While some Italian Ciauscolo is smoked, we instead add a healthy dose of porcini mushroom to ours, giving it an earthy umami flavor, with notes of aged Parmesan cheese on the palate. Ciauscolo adds a new dimension to your antipasto platter, served straight up, on grilled bread or perhaps with pickled mushrooms.
