Salumi Storage

  • Fresh Sausages
    • Fresh sausages should be stored at a temperature of 40º F or below, wrapped in plastic to prevent oxidization.
  • Cooked Salumi
    • Cooked salumi should be stored at a temperature of 40º F or below, wrapped in plastic to prevent oxidization.
  • Dry-Cured Salumi
    • The ideal storage for dry-cured salumi is to hang, unwrapped, a cool (~50-60º F), dry (~70-80% humidity), dark room.  If such a room is not available, then store your salumi wrapped in paper in a refrigerated space.
